I found out today that it’s my Chinese birthday.  Upon sharing the news with my 3.5 year old son, he declared my urgent need for a birthday cake – with a candle of course.  Not keen on getting out the Kitchenaid mixer & making a large cake in the oven (we tend to make layer cakes in this household), we decided to try something different and make our own version of a microwave mug cake.  I felt like green tea; Lil’ E felt like red bean.. so we decided to make a compromise and meld the two together – and it ended up being the best birthday cake ever!  Prep, cooking & clean up time took less than 10 minutes.  The cake was light like a sponge cake but lovely and moist, and not too sweet.  It’s definitely worth keeping in the repertoire.  In fact I’m pretty sure I’ll be creating a few more mug cakes for special evening treats.

Ingredients (makes 1)
50 g butter
2 tbsp caster sugar
3 tbsp plain flour
1 tbsp almond meal
½ tsp matcha
½ tsp baking powder
1 egg
1/8 tsp vanilla bean paste
2 tbsp thickened cream
1 tbsp sweetened red adzuki beans (mashed)

Directions
Melt the butter in the mug, add all of the other ingredients except the red beans and mix together well with a small whisk (eg. Magiwhisk). Roughly mix in the red beans.

 

Place in the microwave and cook for approximately 1 minute & 50 seconds. Time will vary according to the strength of your microwave oven. Enjoy hot!

Note: If you want to make the recipe nut-free, just substitute the almond meal for another tablespoon of plain flour!

Notes
  1. You can make this recipe nut-free by substituting the almond meal for an extra tablespoon of plain flour.
  2. The mug cake is very likely to bubble over whilst cooking so it's best to place a plate underneath the mug, and wipe clean with a wet cloth once the cooking time has elapsed.
